One thing that grain fed feed lot cattle can give the producer and the consumer is a almost uniform consistency in flavor. With every cow on the lot being fed the same amount and type of food, the resulting product will be consistent in flavor, if nothing else. With grass fed there is a lack of control which many argue is a good thing. From cow to cow and cut to cut the flavors can be slightly different due to the natural feeding habits of each grass fed cow. Theses flavors have been described as nutty, buttery and slightly gamey. Eating grass fed beef, like a fine bottle of wine is a culinary mystery and delight.
Scientific studies have shown that grass fed cows have lower saturated fat and higher omega-3 fatty acids than grain fed cows. CLA, a potent cancer fighting agent is also present in higher amounts in grass fed cows. Humans can not eat grass, we have stomachs and not rumens. Which is a shame because many grasses have substantial health benefits. In order to get those benefits we need to break down grasses into something we can eat. Fortunately, the cow is a perfect machine for us to do this with.
Cow eats grass, cow poops on grass, poop fertilizes the grass, grass grows to be eaten again. Brilliant! This is an overly simple explanation of the process but it makes a point. Think of all the fuel being saved by not having to raise and transport grain to feed grain fed cattle or think of all the manure that goes back into the earth that does not have to be disposed of by the farmer. When animals live the way nature intended, there is a more symbiotic relationship with the planet and an overall healthier relationship for the planet.
