1.  Do not over cook your meat!  Because grass fed beef is leaner and has healthier fats, it cooks faster and can be a little tougher than grain fed beef. The number one reason for tough grass fed beef is overcooking. Generally cooking grass fed beef is 30% faster than grain fed beef.  The reason for this is that it is leaner and the fat in it is healthier fat which melts as a lower temperature than the fat in grain fed beef.

2.  Coat your beef in olive oil before cooking grass fed beef to avoid sticking and to hold in some moisture.


3.  Consider a salt blanket for your steak to tenderize it. Cover the steak with sea salt one hour before cooking (really cover it).  When you are ready to cook it, remove the salt under running water and blot dry.  The meat will be more tender and very little of the salt will remain, but the taste and texture will be great.


4.  Do not puncture the meat with a fork or any other sharp object.  This will release juices when the steak is cooking making it more tough.  Use tongs to turn the meat and not a fork when cooking grass fed beef.


5.  Sear both sides on high heat for about 30 seconds prior to indirect heat cooking.  This will seal in juices and flavor.

Salt one pound of grass fed ground beef


Make  2 1/2 pound patty, about a 3/4 inch thick,


Cook over medium high heat until desired doneness.


Melt one piece of cheddar cheese  on each patty at end of cooking time


Serve with lettuce, tomato, natural bacon, onion and Thousand Island dressing.


Assemble on a cibatta role or sourdough role.



Grass fed beef is leaner and has healthier fats than its grain fed counterpart therefore cooking grass fed beef is a little different than cooking corn fed beef.
